A couple of months ago, my husband and I scored a TON of coconut flour for absolutely free on Craigslist.  With funds being low and not wanting to show up empty handed at a church event, it was time to be creative.  What did I do? I baked this pretty healthy loaf of bread.  The bread was inspired by https://recipes.sparkpeople.com.

 

HOW TO:

Five simple ingredients were called for:

untitled (2 of 2)-2– 1/2 cup of coconut flour (See benefits below)

-1/4 teaspoon of Celtic salt (I used pink Himalayan salt. Both are detoxifying and full of minerals!)

-1/4 teaspoon of baking soda

 

untitled (1 of 2)-2-5 or 6 eggs (I needed 6; the coconut flour is extremely absorbent)

-1/2 cup of melted coconut oil (full of healthy fats and antibacterial properties)

 

 

 

 

 

So, to be completely honest, the bread was super bland.  I was a little bummed out! That was until my super-husband came to the rescue!  He took a slice of the bread, rubbed a little more coconut oil on top, then sprinkled some Himalayan salt, garlic,  and pepper.

Low and behold, it was really GOOD!!

Some benefits of Coconut flour:

1.It is gluten-free and hypoallergenic

2.Has a glycemic lowering effect so our bodies don’t receive an immediate sugar rush, as in wheat or grain products

3.It is rich in minerals from Coconut palms (our bodies need this stuff!) and lacks phytic acid (an anti-nutrient found in grains).

4.It is rich in fiber!

Try it out and add some of your favorite ingredients!
Maybe some bananas and honey for something sweeter 🙂
